Simple, easy & quick. This dish is sure to impress, even when the budget is low and company high!
Ingredients:
Kent Pumpkin
Carrots
Baby beetroot (I used canned-whole)
Garlic
Avocado
Rocket
Whole grain mustard
Maple Syrup
Olive Oil
Fresh lemon
Pre-heat oven to 180 degrees.
Dice pumpkin, beets and carrots and place on baking tray. Finely slice garlic and lemon and place, scattered, through out the tray.
Combine 1 tbsp mustard, 1 tbsp maple syrup and 2 tbsp olive oil and drizzle over vegetables. Bake until cooked, roughly 30 minutes.
Toss with fresh rocket and sliced avocado.
